As far as I understood, this setting works in the tablets to show (or not) the hidden applications for the interviewer.
Is there a way to hide the applications in the server? That is, we have several applications that we deployed, some are real, some are for tests only, some are internal applications for the developers. The problem is that when the interviewer uses the Menu to Add an application, ALL the applications deployed in the server are shown.

There is not an option to do this at the moment. We can consider it for a future release.

You might also consider running multiple instances of CSWeb and have the interviewers connect to the one that contains only the applications that are relevant for their work.
